This wine is, in itself, an extract or summary of the year. That’s why we cannot follow any set recipe or predetermine the course of vinification. The 2022 harvest was macerated for a shorter period compared to 2020. We separated it from the lees once the wine reached optimal stability. This year, we added one more element – after extended maceration, the wine was placed in used oak barrels for additional micro-oxygenation and more complex aging. This resulted in a crisp, intense, layered, and simply lively Malvasia!
Wine description: The color is amber, the aroma reminiscent of aromatic herbs, dried apricots, almonds, chestnut honey, and spices like cinnamon, coriander, and turmeric. On the palate, it is intense, vibrant, full-bodied, and has a long finish. The grapes come from terraced vineyards on white soil with a warm, northwest-facing exposure.
Food pairing: It pairs excellently with structured dishes such as spicy stews, sauerkraut, sarma (stuffed cabbage), dishes with truffles and mushrooms, wild asparagus, foie gras, and beef cheeks roasted with potatoes. It is also recommended with fish stew, cod, oven-baked John Dory, and meat dishes like liver, foie gras, T-bone steaks, and intense dishes with mushrooms, truffles, and sauerkraut.
