Malvazija Castagnari is produced on the Castagnari hill, located in the Buje Hills, characterized by white soil (flysch) and a ventilated Mediterranean climate. The grapes for this Malvasia are carefully selected from the best vineyard position, where there is a higher concentration of carbonates and active lime, resulting in a greater concentration of extract. In the cellar, the wine is produced in reduction to preserve the primary varietal aromas. Maceration lasts for one night, followed by pressing and inoculation with indigenous yeast (pied de cuve), prepared a few days earlier from the same vineyard.

After fermentation, the wine ages on fine lees (sur lie method) in stainless steel tanks for two years, and then it is bottled and aged in the bottle for at least three months before being released on the market.

Food pairing:

It pairs excellently with fish, shellfish, white meats, and salads, especially seafood. It can also be paired with caviar, cod, smoked salmon, sushi, and pastas like ravioli and macaroni with cheese. It goes well with hard-aged cheeses and prosciutto.
